Breakfast Quesadillas

INGREDIENTS
1lb Ground Turkey (to make turkey sausage)
4 Whole Eggs
Mission Tortilla Wraps Gluten Free or Tortilla Land
SAUSAGE MIX:
1.25lbs ground turkey meat
1 clove garlic, minced
1 tsp ground sage
1/2 tsp celery salt
1/2 tsp onion powder
1/4 tsp cayenne pepper
1/4 tsp ground cumin
3/4 tsp sea salt
1/2 tsp fresh-ground black pepper
INSTRUCTIONS
1. Cook turkey until browned and cooked through then remove to a plate. 2. Reduce heat to low and add 4 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan.
3. Cook over low heat until eggs are nearly cooked through. Mix in cooked sausage and place aside. 4. Place tortilla in pan and sauté both sides until golden brown. Place protein mix over half of the surface and fold the tortilla in half. 3-4 mins on medium heat.
Storage: Can store in fridge up to 5 days
Toppings: Can add cheese, salsa, and spinach in the sausage mix
