Shephard's Pie

INGREDIENTS: * 1 pouch Idaho Spuds Veggie Mash

Sauce: * 1 15oz can petite diced tomatoes * 1 1/2 cup beef stock * 1 teaspoon basil * 2 teaspoons minced garlic * 1 teaspoon Italian seasoning * 1 teaspoon salt


Filling: * 2 pounds ground beef * 1 medium onion chopped * 1 12oz frozen bag of mixed peas and carrots (can use half the bag)


INSTRUCTIONS 1. In a large saucepan, boil 2 cups of water and then add in pouch of Veggie Mash. Set aside.

2. Place all of the sauce ingredients into a bowl and set aside.

3. Brown the ground beef and onions in a large skillet or saucepan. Drain the fat off the meat. Add the sauce and chopped vegetables to the skillet.

4. Cover the skillet and allow the meat and veggies to simmer for 10-15 minutes until the veggies start getting tender. Don't worry about cooking all the way through since they will continue to cook in the oven.

5. Preheat the oven to 350 degrees. Transfer the meat and veggies to a 9x13 pan. Top the meat mixture with the mashed potatoes and spread it out evenly.

6. Bake for 15-20 minutes at 350 degrees.
